Thorn-Clarke Shotfire Quartage 2016, Barossa Valley, South Australia, Australia: From South Australia's Barossa Valley, Thorn Clarke's Shotfire Quartage (2016) is robust, full of ripe black fruit, tannins and announces its arrival. It's a very big wine that needs meat --the rarer the better. A full-bodied blend of cabernet sauvignon, cabernet franc, petit Verdot and merlot grapes. Food pairings: grilled sirloin steak with garlic mashed potatoes and seasonal vegetables, vine leaves stuffed with minced sirloin and baked in tomato sauce. Graham Beck Méthode Cap Classique Brut Rosé Pinot Noir Chardonnay, Western Cape W.O., South Africa: Full-bodied, toasty and crisp with lots of Pinot Noir goodness in this zesty bubbly. Lovely cherry and strawberry notes and clean, crisp finish. Graham Beck is a master of sparkling wines, in my opinion, these are his best. Highly recommended. Perfect for planked salmon.
