Fennel, Melon and Feta Salad Recipe Paired with Floral White Wine

There’s something magical about the month of June. Maybe it’s that flowers are in full blossom, or maybe it’s that you can finally go outside without wearing a jacket.

Whatever it is, I love it and make the most of summer by lounging outside, lightly snacking on some savoury Canadian Cheese, armed with a glass of white wine.

This Fennel-Melon and Feta salad was practically made for a day spent relaxing on the patio. The ingredients are really simple and I recommend shopping for them at local farmers markets that crop up during this time of year.

All you’ll need to do is crumble some delicious Canadian Feta over some melon and fennel, add a splash of lime juice, and enjoy.

And to best do that, pour yourself a full glass of Argentinean Torrontés – I am partial to the 2014 Susana Balbo Signature Torrontés, which has gorgeous notes of white flowers, light spice and spring rain, that brings out the full-flavour of Canadian Feta.

Fennel, Melon and Feta Salad Recipe

Ingredients:Susana Balbo Signature Torrontes 2014
1 cup (250 mL) red onion, thinly sliced
¼ cup (60 mL) lime juice
4 cups (1 L) small fennel bulb and foliage, thinly sliced
1½ cups (375 mL) cantaloupe, diced
1½ cups (375 mL) honeydew, diced
1½ cups (375 mL) watermelon, diced
1 cup (250 mL) Canadian Feta, coarsely crumbled
1 tsp (5 mL) fennel seeds, crushed
Freshly ground pepper

Preparations:

Place red onion in a large bowl. Sprinkle with lime juice and let soften for at least 5 minutes.

Add all remaining ingredients and generously season with pepper.

Stir and serve. Cheese alternative: Canadian Bocconcini (and add salt to taste).

If you’ve never tried adding fennel to the classic combination of melon and Canadian Feta, you’re in for a surprise. The crushed fennel seeds bring out all the rich aromas of ripe cantaloupe, honeydew and watermelon.
