This Georgian late-harvest wine is made from the country's indigenous Saperavi grape, whose name means "paint dye" due to its naturally dark colour. Torres Cos Perpetual 2015, Priorat D.O.C.A., Spain: Torres Cos Perpetual 2015 is made from old-vine Grenache and Cariñena grown in licorella slate soils. The wine juice was fermented in stainless steel, with malolactic conversion and matured for 18 months in new French oak barrels. Although quite oaky just now, it has the body and abundance of blackberry, cherry fruit flavours to carry it through. Nice mocha and espresso flavours showing through from oak ageing. Bottled in 2017, this robust Priorat red can definitely benefit from a few years cellar time to show its best. Made from the iconic Malbec grape, this wine underwent a spontaneous fermentation, rather than one induced by the winemaker with specific yeasts. The wine was aged in oak barrels.
