Red Wine

Chateau Ste. Michelle Merlot 2015, Columbia Valley, Washington, United States: A blockbuster Washington Merlot from a strong vintage. Aromas of black cherry, spice and smoke. A splash of Syrah in this mostly Merlot wine adds a depth of black raspberry flavour and supple texture. Washington didn't suffer from the phylloxera root louse devastation so the vines are still planted on 100% vinifera rootstock and convey that typicity beautifully. Pair with grilled pork chops. Merlot food pairings: grilled pork chops, pork tenderloin, sausage-stuffed Portobello mushrooms. White Wine

William Fèvre Saint-Bris 2017, Burgundy A.C., France: This is a stunning crafted Sauvignon Blanc from the little appellation of Saint Bris. No oak and very refreshing. There's only the one producer of this wine in Saint-Bris and not far from Chablis. Look for soft tropical fruit, white currant, gooseberry and lemon zest flavours finishing crisp and clean on the palate. Pair with pan-fried oysters on toast.
