Pairing Wine with Balderson Cheese

The finest Ontario and British Columbia wines make the best marriages with various Balderson mild and aged cheddars. The cheese flatters the wine, and the wine mellows the cheese. The older the cheese, the more flavourful and intense the wine is needed to match it. The Cheddar Balderson Mild: a gentle, buttery cheese that would go well with a dry sparkling wine or a Sauvignon Blanc, unoaked Chardonnay or a dry rose. Avoid full-bodied reds with tannin or oak-aged Chardonnays whose flavour will overpower the cheese. The Wines Ontario: Chateau des Charmes Sauvignon Blanc British Columbia: Calona Private Reserve Semillon […]

Toronto Wine Tasting Shows Wide Diversity of Styles

By Mymi Myriam The wow factor as I walked into the sumptuous lobby of the Governor’s Room in the heart of the Exhibition Place is high. This is not just any room, it is a lavish, opulent and enormous ballroom. I proceeded through the enormous ornate wooden doors. Upon entering, I was warmly welcomed by a lovely lady who handed me an empty wine glass and my journey started. The Profile Wine Group is a coalition of three wine merchants: Barrique Wine Imports, VinVino Wine Merchants, and Du Chasse Wines and Spirits. They are one of Canada’s premier wine and […]

Pairing Wine with Helicopter & Quail at Malivoire Winery

On a recent visit to Niagara, I was fortunate to spend time with Martin Malivoire of Malivoire winery, a producer of spectacular Pinot Noirs. We arrived at his gravity-flow winery by helicopter along with Magdalena Kaiser-Smit of the Ontario Wine Council. This gave us a terrific overview of the region (though I was glad to be on firm ground again when we landed) We tasted through a range of his lovely Pinots, both from the estate vineyard and from the coveted Moire Vineyard. You’ll find my reviews of the current and past vintages here.     Then we went on […]

Undercover Sommelier

Unless you count the time I handed out plates at a church supper, I’ve never worked as a waiter. Of course, that hasn’t stopped me from commenting on the service in restaurants—particularly the wine service—as if I knew exactly what I was talking about.       Now, to stopper my leaking credibility, I’ve decided to work in a restaurant for a night. Only the best would do, so I selected Le Baccara, an award-winning restaurant in Québec that offers haute French cuisine, with classic service. That would be just perfect for me, I thought—until I realized that as a […]

Jane’s Gems: Napa Valley Gold > 90 Point Wines in the LCBO Vintages October 17

By Jane Staples Who doesn’t love a Napa Valley Chardonnay? Ideally situated by the Pacific coast, with the right balance of sunshine, ocean breezes and cooling moist fog, Napa Chardonnay is a favourite amongst wine fans. The flavours range from crisp and refreshing to richer, more buttery styles. Ripe tropical fruit notes and intense aromatics characterize Chards from this premium wine region, rivalling those from Bordeaux and Tuscany. The upside of the drought that hit California in recent years has been superb vintages from 2012, 2013 and 2014 for both reds and whites. When vines are stressed by a water […]
