Ice cider is made in a very similar way as Icewine is, except cider is apple-based and icewine is grape-based. For this cuvée of blend of cider, the cidery used a mix of frozen Russet, Ida Red and Spy apples have been pressed to produce a sweet and concentrated juice. This is then fermented to create this luscious cider. Gorgeous apple goodness: your mouth waters even smelling this terrific cider. Good balance. It's better than pie in a glass. and would pair nicely with caramel desserts, apple pie or pan-fried foie gras.

Nutty / appley / earthy / sherry-like / medium sweet with substantial acidity to balance.

A cheese board with some kind of apple compote. La Sauvagine should be included in this mix!

June 22, 2014: Medium copper with a nose of bruised apples, floral/blossom and spice cupboard. The palate is sweet with ripe apple and spice but an edginess and a bitter note that takes away a bit. A little disappointing compared to some excellent bottles in past years. A nice pairing with apple strudel.
