Valdespino Inocente Fino Sherry, Jerez D.O., Spain: This non-vintage dated fino sherry offers lovely aromas of toasted almond on the nose and palate. Produced in the heart of the sherry region -- Jerez -- it's fermented in 600-litre American oak botas, which are very large casks. This requires an considerable amount of manual labour as compared to fermenting the wine in stainless steel tanks, especially when more than tens of thousands of kilos of grapes are involved. Kendall-Jackson Grand Reserve Cabernet Sauvignon 2013, Sonoma County, California, United States: Such an elegant, yet expressive Californian Cabernet on the nose. Aromas of blackcurrant cassis mingle with dried herbs and cigar box. The palate opens to layers of dark fruit anise and smoke. Terrific balance, depth and length with a dry finish. This Californian red wine is made from Cabernet Sauvignon grapes grown in Sonoma, mostly Knights Valley. It's actually a blend of mostly Cabernet Sauvignon, and a splash of Petit Verdot, Merlot and Cabernet Franc grapes. The wine was matured in French oak barrels mostly, with a few American oak barrels. Villa Girardi Bure Alto Valpolicella Ripasso Classico Superiore 2014, Veneto D.O.C., Italy: A savoury, meaty, juicy Italian red wine to chew on with deep satisfaction. Cedar, chewy black cherry layers float happily on full-bodied weight. The Ripasso method takes leftover pomace from making Amarone wine and adds it to a Valpolicella wine to start a second fermentation and in doing so, adds alcohol, body, tannin and flavour to the final wine. Gorgeous concentration here with almost raisined, cherry fruit aromas. This traditional technique of ripasso truly adds richness and depth to this red wine. Terrific! Vina koyle Reserve Cabernet Sauvignon 2015, Colchagua Valley, Chile, Chile: The name Koyle comes from the native Chilean plant which grows in oak forests and that produces a beautiful purple flower as well as greatly desired fruit. This endangered species is found abundantly in the winery's vineyards located in Alto Colchagua. Lovely blackberry, mint on the nose of this full-bodied Chilean red wine. You can't go wrong with this robust red, especially at this price point. It has the power of Chilean fruit but is also well-sculpted and balanced with a satisfying long finish. The 2015 vintage of the Gran Reserva Cabernet Sauvignon has attractive dark fruit flavours. Beringer Cabernet Sauvignon 2012, Napa Valley, California, United States: This complex, subtle and full-bodied cabernet sauvignon has great elegance and a long finish. Dark fruit and smoke notes on this red wine, with lots of layers and great cellar potential. Superb craftsmanship. Highly recommended. The Cabernet Sauvignon grapes for this benchmark wine are grown in one of Napa Valley's greatest vineyards. The wine is aged for about 18 months in custom-toasted new French oak barrels. Pair with rare filet mignon. The 2012 vintage of this Californian Cabernet Sauvignon Private Reserve is made from grapes grown in only two winery estate vineyards, the Steinhauer Vineyard on Howell Mountain (about 70%) and St. Helena Home Vineyard (about 30%). The wine has a high pH of 3.9 as the grapes were able to ripen fully, yet it remains balanced with great structure. This Cabernet was matured for 17 months in new French oak barrels, then another 12 months in the bottle before being released from the winery. Great cellar wine. Aromas of tanned leather, violets, spice and dried fruit. Perfect for lamb in rosemary. Highly recommended. The Amastuola Garden Vineyard is located on a plateau 201 metres above sea level and is further assisted by a Mediterranean climate that works well for organic farming. This organic red wine uses winemaking methods that date back to Magna Grecia period, with the precious metals and nutrients in the soils lending nuance to this robust Italian red wine. The vines are planted in mineral-rich soils with the cooling breezes of the Pacific Ocean to moderate temperatures. Bodegas Balbas Reserva Tempranillo 2013, Ribera Del Duero D.O., Spain: This full-bodied Spanish red wine has a good grip on the palate it offers more earthy, smoky, dusty aromas and flavours than fruit-forward ones. Complex, elegant and mature. Dry and subtle, with tanned leather and cigar box and made mostly from the traditional Tempranillo grape with some Cabernet. The 2012 was a strong one, but this wine has made improvements well beyond what the vintage would arrant. A beautifully balanced red wine blend of 46% Merlot with 25% Cab Franc, 16% Cab Sauv and 13% Malbec grapes. The wine is aged 21 months in French oak barrels. Penfolds Bin 389 Cabernet Shiraz 2013, South Australia, Australia: A rich, complex, full-bodied red wine blend of 51% Cabernet and 49% Shiraz grapes from one of Australia's best producers. Black cherry liqueur aromas and flavours on the nose and mid-palate. The grapes are grown in Wrattonbully, Barossa, McLaren Vale, Langhorne Creek and Robe regions. The wine was matured 12 months in American oak hogshead barrels, of which 40% were new. La Vite Lucente 2014, Tuscany I.G.T., Italy: Complex, full-bodied yet subtle Italian red wine. Gorgeous aromas of dried black cherry, cedar, smoke, fleshy blackberries from an iconic producer.
