Taste of Ontario 2019 @ Ottawa: A crisp, dry sparkling with a difference. This is made in the traditional method, 100% from Chardonnay grapes, from several vintages and aged 41 months on the lees. It is bone dry. A multitude of fine bubbles and aromas of quince and anise/fennel joined to a refreshing taste of tart apple .

An appropriately named celebratory ceremonial sparkler from Rosehall Run. This Blanc de Blanc is made from their own estate Chardonnay grapes, offering a light mousse and medium delicate bubbles. Crisp creen apples, with lingering buttered toast, and zesty grapefruit citrus. Nutty and crisp with a light body. Pretty and dry. This will pair perfectly with a variety of foods or just fine on its own while raising a glass toasting that special event. Tasted at the winery.

Celebrating their 15th anniversary with their first methode traditionelle sparkling wine, Ceremony is made from Dijon clones, with grapes from multiple vintages, here, '09, '11 and '13. Delightful citrus and tropical notes, with fine mousse and good structure.

Aromas of melon, apple and yeasty brioche. Tropical fruit and pear notes with some minerality. Lively acidity and creamy bubbles- bone dry- very enjoyable sparkling out of P.E.C. Pairs well with soft cheese and charcuterie.
Rosehall Run Ceremony Brut is made is a Prince Edward Country, Ontario blanc de blanc Ontario sparkling wine made in the traditional method and from 100% Chardonnay grapes. Rosehall Run's celebrates their 15th anniversary with a first-time methode traditionelle sparkling wine. Aged in mostly older French oak puncheons, this cuvee is from multiple vintages of estate-grown chardonnay and housed in the Rosehall Run Barrel Cellar resting on its lees or in champagne parlance 'en tirage'. CEREMONY was finished with minimal dosage Frothy and creamy, it's bone-dry and medium-bodied with crisp apple and pear flavours. Pair with oysters. - Community Wine Reviews
