Valdespino Inocente Sherry Fino Dry, Jerez Xérès D.O., Spain: This single vineyard fortified Spanish wine is an acquired taste. Dry, yet it's generally an after-dinner drink given it's strength unless you're still studying at Oxford. Dry and slightly nutty. This would also work at the beginning of the meal with a savoury soup, especially if you add a splash of this sherry to it.
