A hallway breeze of minty cool rushes out of the glass, then you open the door to fleshy black fruit on the palate and a lovely long finish. Full-bodied, smooth. This is a flagship wine for Australia, from a master producer. Great complexity, balance, structure and depth. It will do well in the cellar, but I challenge you to wait as it's terrific now! The Cabernet Sauvignon grapes for this robust Australian red wine grow in the McLaren Vale, Barossa Valley, Robe, Coonawarra, Wrattonbully, Padthaway and Langhorne Creek. The 2012 Bin 407 Cabernet Sauvignon has polished tannins. The wine was aged in 30% new French oak barrels and remainder, in American oak barrels, of which 20% is new. Decant 1-2 hours. Try it tonight with rare filet mignon. Highly recommended.

A lovely Cabernet Sauvignon from South Australia. Big and bold, with juicy dark fruit, thick tannins and high acidity. Full-bodied and luscious! If you are looking for beautiful example of Cab Sauv to go with rich protein dishes, this one is perfect.

A gorgeous Cabernet Sauvignon from one of Australia's most storied wineries, Penfolds. The nose welcomes you with fleshy dark berries, mint chocolate, mocha, and black pepper. Full bodied, and so incredibly well balanced! Packed full of sweet dark fruit, black currant, black cherry, cedar, and baking spices. A wine with the structure to permit ageing 20+ years, and each year it will maintain that beautiful balance while those sweet fruits evolve into more rustic notes. This would make a fantastic gifting wine this holiday season, and for those special roast beef meals, this would be ideal! Enjoy 2015-2035. 93 points. Tasted October 2015. Deeply hued ruby and opaque. Aromas of cassis, black currant, spice and mocha. A delightful mouthful of black fruit and chocolate with firm tannins that are grippy but not too aggressive. Nice acidity and well balanced. The finish is persistent and full of fruit and toasty oak notes. Roasted venison with a juniper berry glaze would go nicely with this elegant Cabernet.

The 2012 vintage offers rich dense concentration of fruit aromatics, well-balanced tannins and acidity. Amongst the red berry, eucalyptus and mint shine through with persistence of red and blackberry and black pepper in a long finish. This wine is exceptionally smooth and well integrated at it's age. Recommend to enjoy 2016-2022. Fantastic companion with BBQ steak or Tex Mex fajiitas.
