A lovely, off-dry sparkling Rosé from Niagara. This bubbly achieves its sweetness from a dosage of cabernet icewine. Aromas of field berries and raspberries. Pair with fruit cobbler or flan.

Sparkling Rosé food pairings: raw oysters with a red berry mignonette, onion tarte, egg dishes.

The colour of this sparkling Rosé was darker than anticipated. It reminds me of framboise which opened the door to stunning strawberry aroma on the nose. A cuveé of Chardonnay (55%), Pinot Noir (35%) Cabernet Franc (10%) with a dosage of Cabernet Franc ICEWINE. It has 16g of residual sugar so you can expect a touch of sweet however this rosé comes off as dry. The perfect marriage of traditional method sparkling with the best of what Niagara has to offer.

This is an amazing off-dry sparkler sweetened with a dosage of Ontario icewine. Aromas of field berry, lemon zest, and some fresh bready, yeasty notes. This wine has a beautiful pale pink colour and a fine, fizzy mousse. Off-dry on the palate with bright, vibrant acidity, lots of berry and citrus notes and a crisp finish. Very refreshing and enjoyable, perfect for celebratory toasts, or to accompany a variety of brunch foods.

This bubbly has ice wine characteristics with its aromas of sweet marmalade and dried apricot. There is also peach and red berries. On the palate, there are flavours of marmalade and citrus, a touch of residual sugar and a nice level of acidity.

Pair it with seafood.
Serve it at 8-10 degrees.

Peller Estates Ice Cuvée is a 55% Chardonnay, 35% Pinot Noir and 10 % Cabernet Franc sparkling rosé blend from the Niagara Peninsula wine region made in the traditional method and with an Cabernet Icewine dosage hence the name Ice Cuvée.
