Beautiful Sparkling Wine made in the traditional method from 60% Pinot Noir and 40% Chardonnay. Stunning in the glass with a deep golden colour and delicate bubbles. On the nose, dried white fruit, baked apple, almond florentine, a touch of red berries and mineral notes. On the palate, it has some omph and opulence with notes of dried apricot, clementine, fresh acidity, delicate mousse, and a sharp nutty finish. Very lovely!

Very fragrant on the nose with aromas of pear, orchard fruit, honey, lychee, a touch of ginger, floral notes, and delicate baking spice. It is slightly textured on the palate and round. The orchard fruit, pear, lychee and honey notes carry through and linger on the palate along with clementine and oak notes. Great on its own, it would also pair well with mild indian food or a charcuterie board. Tasted December 2020

One the nose, concentrated aromas of pear, stone fruit, and lychee with clementine notes, honeydew, delicate floral notes, white pepper, saline, and honey. Dry on the palate with a slightly textured mouthfeel and notes of nectarine, lychee, honeydew, lime, with that saline quality seeping through. Tasted Dec 2020

Give it a swirl and red berries come to the surface along with leather, floral notes, and a touch of beet. Full bodied on the palate with notes of dark plum, cassis, and juicy raspberry, along with coffee notes and a chocolate after taste. Pair with grilled red meat or a coffee rubbed roast. Tasted December 2020

I love the tartness often associated with cool climate wines. Currently, I am loving Ontario wines, especially Pinot Noir, Cab Franc, and dry Riesling. I have a soft spot for Italian wine. I also love a wide range of sparkling wines, especially those made using the Champenoise method.
