Aged for 5 years in the bottle, this traditional method bubbly from Gaspereau Valley, Nova Scotia, is made from 100% organic estate l'Acadie Blanc, and displays aromas of bruised apple, peach tart, honey roasted almonds, jasmine, hints of pineapple, and saline minerality. Dry and medium bodied on the palate with fine bubbles, a pleasant creamy mouthfeel, and notes of crab apple and pomelo, with subtle saline notes, and a long finish. L'Acadie Blanc has similarities with Chardonnay in terms of body and some of the characteristics, in my opinion, although I find it has more of a floral, honey, and peach-apricot profile. Try this one with fried chicken, tempura fried cauliflower, or with pasta alfredo. This bottle is a treat and I loved it. Tasted Nov 2022

I enoyed l'Acadie Blanc 2020. On the nose, bruised apple, roasted pineapple, almond biscotti, orange marmalade and honey.  Medium bodied on the palate, dry, with a pleasant mouthfeel and a certain opulence.  Balanced acidity with notes of red delicious apple, lemon, almond, hints of saline and an umami quality. Enjoy with lobster, chicken in a cream sauce, or with pasta alfredo. Tasted Oct 2022.

On the nose, pink grapefruit, delicate peach, and field strawberry notes, followed by tropical fruit aromas, honey, floral, and mineral notes. A pleasant smooth texture on the palate with fine bubbles. Crisp and dry with pink grapefruit, cranberry, strawberry, and saline notes seeping through. Perfect drink to have with friends. Enjoy on its own, or try with your favourite fried app, or with fish and chips. Tasted Aug 2022

Made in the traditional method, this Columbia Valley bubbly is fragrant on the nose with notes of jasmine, pomelo, and pink grapefruit, followed by pie crust, and mineral notes. Luxurious on the palate with fine bubbles, a delicate mousse, and a pleasant mouth-feel. Medium-bodied, dry, with balanced acidity, and citrus notes that carry through on the palate. There's a touch of sharpness at the finish and the flavours linger. Overall, a well-made wine that tastes expensive, yet is at an excellent price point. Wine food pairing: Great on its own, or try with salty fried appetizers or with quiche Lorraine. Tasted Aug 2022

Made from 92% Pinot Noir, 5% Viognier, and 3% Chardonnay, and aged 5 months in neutral oak, this certified Organic Rosé releases aromas of red field berries, predominantly strawberry, delicate floral, cantaloupe, clementine, almond torte, with just a hint of fresh mint. Dry and medium-bodied on the palate with fresh acidity and notes of nectarine, strawberry, pomelo, lime, almond, and saline minerality. Enjoy on its own or with seafood salad, pan-seared fish, or with a light Summer salad. Tasted July 2022.
