This robust Niagara red wine uses a variation on the appassimento method traditionally used in northern Italy for Ripasso and Amarone style wines. The grapes for the wine are first dried in a tobacco kiln before being fermented to add richness, colour, flavour and depth to the wine.

Deep ruby colour, pronounced nose, dry, balanced acidity, medium tannin and body. Aromas of ripe dark fruit including blackberry, cassis, blackcurrrant and black cherry with sweet vanilla. Tastes of ripe black fruit with cedar and a hint of green pepper. This is made using a modified appassimento method and is good with or without food.

Eucalyptus and cedar aromas fill the glass, with flavours of tart cherries and black pepper make this a knock your socks off Cab Fran(k)! Structured tannins and acidity leave a persistent cherry finish on the tongue. Would pair wonderfully with lamb dishes or meat-lovers pizza.

A big Cab Franc with aromas of juicy fruit, cigar box, and vanilla. Lots of dark fruit in the taste as well as firm tannins. There's a smoky, black cherry finish. Definitely not your typical Cab Franc.

This Cabernet Franc from the Niagara region uses grapes dried in tobacco kilns. It has aromas of plum and cassis. Flavours of spice, vanilla and leather abound on the tongue. It would be a great wine to pair with grilled red meats.
