Clean, crisp Ontario sparkling wine with a refreshing finish. Notes of green apple and stone fruit. The beer-bottle crown cap allows the bubbly to continue to develop flavours and bubbles (just as they do in Champagne before finally sealing it with the mushroom-shaped large cork). Pair with fried chicken.

Sparkling food pairings: seafood, mushroom risotto, cold chicken sammies.

Traditional method sparkling, made from Chardonnay grapes fermented and aged in neutral oak before being bottled in Spring 2011. Disgorgement took place in Spring 2016, five years later. Creamy and autolytic, textured with a fine mousse. All about the green apple, lemon, and dough aromas. This outstanding bubbly took home a platinum medal at the 2017 Decanter world wine awards. Save for a special occasion, and serve with oysters, cheeses, or bacon cheddar shortbread.

Wine grapes for Flat Rock Cellars, Riddled (2010) came from the Twenty Mile Bench, Niagara Escarpment wine region This Ontario bubbly is made from 100% Chardonnay wine grapes and is fresh, crisp with crunchy green apple and stone fruit, and was named "Riddled" as a tribute to the process of making sparkling wine, especially the traditional ways in Champagne, where bottles were turned periodically, or riddled, as they rested upside down on their lees (sediment) before disgorging that sediment and putting the final big cork in the bottle. - Community Wine Reviews
