Mocha dark aromas with black cherry goodness. Smooth and medium-bodied. Delicious! Pressed in French oak barrels then aged in them for 10 months.

Very earthy with mushroom and forest floor aromas. Light-bodied and made in a cool-climate style with sourcherry, beet root notes on the palate. Mouth-watering acidity. Ripe fruit with slightly chalky tannins that are integrating nicely. Tasted Sept/2012.

Date Picked: 29th September 2008
Fruit Condition: Healthy
Handling: Hand Picked into small 25 kg picking bins allowing the fruit to arrive at the winery’s sorting table intact. Fruit was hand sorted, crushed and destemmed.
Fermentation: Fermented with yeast strain RC212. Fermentation took place in small ½ tonne vats. Primary fermentation took 18 days in total. Pressed into French oak Barrels and inoculated with commercial malolactic bacteria, aged for 10 months in Barrel.

Bottling date: September 9th 2009 Total Production: 116 cases
