Intensely concentrated black fruit and smoke in this terrific Californian red wine with full-bodied weight and a supple texture. Lovely dried herbs and tobacco on the finish of this Napa Valley classic. This Cabernet Sauvignon was aged 21 months in oak barrels. This one will go for a while in your cellar, but why wait? decant 1-2 hours. Pair with filet mignon. MINE: This Californian Cabernet Sauvignon was aged 21 months in oak barrels. The grapes grown on the southern slopes of Napa Valley's Silverado Bench. Pair with prime rib. Deep and intriguing ruby red colour, the nose shows beautiful layers of dark fruits, black cherry, roasted peppers, dark chocolate, and vanilla. The palate is rich and creamy with layer upon layer of delicious dark fruit all wrapped-up with a modest amount of sweet vanilla that’s backed by great acidity and super fine tannins. Intense aromas of dark berries, plum, dark cherry, vanilla, leather and warm spices. The palate is velvet with supple black fruit repeated with additions of cedar, toast, caramel, toffee and vanilla. Acidity is bright and balances all the nuances in this superbly crafted wine. Fine cuts of beef, or fireside sipping. Your choice. Tasted: March 2015. Once unleashed from the bottle, this wine shows supple red fruit and a hint of leather, slight minerality, rich tannins, full-bodied, medium acidity and well balanced. This wine is an ideal companion for dry-rubbed ribs, spaghetti with herbed meatballs, or vegetarian option of sweet and saucy vegaterian lasagna. Persistence of red berries and leather, medium finish. Enjoy window from 2015-2022.
