The 2007 vintage was the hottest season on record and the vineyards were healthy, combined with very low crop so they didn’t need. After spending an average of 13 months in barrels the individual lots were blended together for bottling. A blend of 365 barrels (out of possible, 1,500 were barrels) of 44% Cabernet Franc, 32% Cabernet Sauvignon and 24% Merlot. Trius red uses fruit from all over the Peninsula. However, in 2007 over 80% of the blend came from the winery's own vineyards and 93% of the blend came from within the Niagara-on-the-lake appellation. Excellent balance and structure with full-bodied aromas of cassis, blackcurrant and spicy oak. Available at Hillebrand Winery.

Cabernet Franc Cabernet Sauvignon Merlot food pairings: roasted eggplant, barbecued beef ribs, beef wellington, mature hard cheese, kidneys, tongue.
