Possibly Township 7 Vineyards & Winery's best Seven Stars Polaris (2019) to date! I am beyond impressed with the balance on this bubble. Produced in the traditional method, this wine undergoes secondary fermentation in the bottle you will have in hand to pop the cork.

Bone-dry on the palate (9.5 g/l residual sugar but the acidity is ultra-balanced, so it seems drier) and full-bodied with the creamiest of fine bubbles persistent and mouth filling with a long, lime zesty finish. Polaris 2019 is fragrant with fresh-cut Granny Smith apple, white florals, baked brioche, toasty and lime citrus aromas, mirrored on the palate with some ripe peach and apricot flavours as well. Finishes long with medium-plus, lip-smacking acidity. Love this sparkler that continues to capture the magic, essence and brilliance of the North Star, Polaris, with its sparkle. Tasted June 21 2023.

The 2019 vintage was much like the previous years in growing degree days but felt cooler with much of the warmth happening earlier in the season. The 2019 vintage was a moderately cool one with wines showing juicy and vibrant fruit, crisp acidity, and moderate alcohol levels.
