Enticing peppery cherry notes on the nose with dried herbs and raspberries on the palate. This delightful wine is smooth, and medium-bodied. It was aged for one year in French oak.

Shiraz Pinot Noir food pairings: pasta with arrabiata sauce (garlic, tomatoes, red chili) and grilled Cajun shrimp, spicy sausage, tuna or pork tenderloin.

An ideal year for drying grapes. The grapes were hand harvested and slowly dried in our drying kilns over a 3 week period. The fruit was concentrated 20-25%. The grapes (70% Shiraz and 30% Pinot Noir) were crushed and fermented on the skins for 18 days. After pressing the wine was moved into 1 year old French barriques and aged for 1 year in barriques. Intensity and complexity is the main ingredient here.
