I was so lucky to have tasted this wine during Natalie Maclean's on-line National Wine Tasting and book launch on November 9 2023! Quails’ Gate Queue 2021 is deliciously decadent, richly fruit-driven, refined and satin-silky on the palate with plushy tannins. Produced from Cabernet Sauvignon, Merlot and Syrah grapes sourced from the winery’s Upper Boucherie bench; a vineyard with southern exposure and volcanic soils rich in mineral deposits, grapes can fully ripen here. It is still a youthful wine and is just beginning to show its best, but right now it is rich in blueberry, cassis, cocoa, plum, dark cherry, pepper spice flavours savoury, smooth and ultra-balanced on the palate. We paired it with a charcuterie board of Prosciutto Parma, Salami Prosciutto, and an array of olives marinated in quality olive oil and, of course, Lindt dark chocolate. It was great with the charcuterie and dark chocolate but sang with the olives.

Grapes were hand-harvested, gently destemmed and transferred to stainless-steel tanks for fermentation. Each varietal was fermented separately and spent up to 14 days on skins and the wine was aged 18 months in French oak barrels (30% new/70% neutral) prior to the final blend.
