The grapes for the Jackson Triggs 2004 Delaine Vineyard Cabernet-Merlot were harvested between November 4th and 11th at 21.5 degrees Brix from the Delaine Vineyard in Niagara-on-the-Lake.

Winemaking
The grapes for our 2004 vintage were fermented on the skins for 14 - 22 days. The wine underwent complete malolactic fermentation and was 100% barrel aged for in small oak barriques.

Winemaker's Notes
Brilliant crimson in colour, our 2004 Cabernet/Merlot exhibits a generous, complex bouquet of black cherry, currant and blackberry aromas layered with spicy notes of tobacco and delicate vanilla oak. Firm leather tannins support a profusion of lush raspberry, chocolate and mint flavours.

Food Pairings
The Cabernet-Merlot pairs perfectly with beef tenderloin, venison, prime rib, rack of lamb or aged cheeses.
