Very envigorating and fresh estate-made sparkling made from a producer very south of where sparkling is usually made - the Rhône, to be exact. The Diois region is sandwiched between the north and south of the Rhône. It is one of the few places in France that produces sparklings in this manner. If you enjoy prosecco, most likely this will be your style but it does carry some residual sugar. The grapes used are not stipulated on the bottle, but by law they must be at least 75% Muscat Blanc à Petits Grains and with a maximum of 25% Clairette.
It's clear (often ancestrale wines can be hazy), bright lemon-yellow, with moderately aggressive bubbles.
The aromas have a lifted pear and peach character. Honeysuckle, lemon juice, and a slight white pepper.
The acidity, first of all, is perfect. It keeps the fruit juicy tasting. More stone fruit, ranier cherry, green pear, and table grape. Chalky minerality on the finish.
The method used to produce this sparkling is very old - much older than Champagne. Methode ancestrale wines, like this one, are fermented in-bottle as Champagne is but without any addition of dosage material. The first phase of alcoholic fermentation is halted and moved to bottle where it will continue, so as to create slightly off-dry sparkling wine.
It's light and fruity; much like a prosecco. There are local proseccos that sometimes utilize this method too, but usually prosecco is done in a pressure controlled vat to make the process more easy to manage.
This is a great, clean introduction to ancestrale sparkling from one of the most interesting places they're produced. This would happily make a good mimosa or cocktail, but it also pairs very well with miso soup and sushi.
The Méthode Diose Ancestrale, is a vinification technique for sparkling wine with partial fermentation in tank that continues in bottle with remaining grape sugars. Second fermentation is when the wine is transferred to its final bottle, the deposit is removed by cold filtration and the bottle is topped up with the same wine, not the addition of dosage or liqueur d'expedition (literally translated: shipping liqueur) as done in Methode Champagenoise. - Community Wine Reviews
