The pedigree on this Prosecco is impressive in that, Valdobbiadene is already known to us as an indication of quality. But if we take that a step further - Rive is one of 2 recognized sub regions of Valdobbiadene and Col del Forno represents 4 hectares of the Rive Sub region known for its soil with layers of clay, sand, pebbles and conglomerates. Add a favourable micro climate and you get a Prosecco I am going to compare to 'Nectar of the Gods.' Every aspect of this delightful Sparkling is just a shade above what you would find in the best Proseccos - from the persistent, fine and creamy mousse to the freshness of the fruity, spicy aromas to the ripe apple, pear and ginger notes on the palate, all delivered with a hint of minerality and a beautiful tension that adds a bit of weight and complexity. Now, cap it off with light anise and ginger notes that extend through an impressively long finish. While the weight and liveliness of this will complement all the usual Sparkling pairings of pastry, seafood, appetizers etc., I would drink this on its own so as not to blunt any of its delicious attributes.
