So many flavours on this ultra-fresh, savoury and umami Amber Pinot Gris from Sperling Vineyards. It's certainly not what you might expect from a regular Pinot Gris. Just dry, medium-bodied and unfiltered, which gives it a bright pink Froesé look, with aromas and flavours of cold earl grey tea, dried wild herbs, dried pear and honeyed quince textured and savoury matched with refreshing acidity made for food. The wine totally turns your head around about Pinot Gris and just what the grape can do on its own.

From Ann Sperling and her winemaking team, "we’ve always had a holistic approach to our winemaking using native and organic yeasts but each time we make this wine, we dig deeper into a grape that everyone making wine or drinking it in the Okanagan thinks they know. "

The winery takes 95 to 100% of the hand-harvested grapes, ferments them in whole clusters, and stemmed grapes in a ferment of wild yeast and wild malolactic conversion, taking sugars and malic acid to complete dryness. Then leave the natural structural elements of the grape intact not adjusting them with additives or sulphites in anyway.

I thought food pairing might be challenge with this wine, but what came immediately to mind was Thai Shrimp cakes, an easy recipe with just a little bit of chili heat. It was a perfect match! Tasted August 2022.

Lovely and full of flavour, this Pinot Gris is fermented in whole cluster bunches and left on the skins to impart added texture and richness. Aromas of bergamot, pear, and a touch of honey with notes of dried herbs. Medium bodied, with some soft, drying tannins, fresh warm citrusy notes and a warm, slightly spicy finish. Enjoy with grilled pork and roasted root veggies.
