Made in the traditional method, this pale lemon coloured sparkler offers vibrant bubbles and a delicate mousse. Aromas of pear, and rising sourdough on the nose accompany flavours of green apples, salinity and crisp pomelo citrus. Pair with washed rind cheeses and seafood dishes. Enjoy!
Rotari Platinum Label 2014 is a traditional method Chardonnay bubble and great value under $20. Vineyards are located on the hills of the Adige Valley at an altitude of 350 to 600 metres above sea level. From the cold maceration phase only the free run must is collected in order to not extract the polyphenols and tannins into the must. Vinification is done in temperature-controlled stainless steel tank with the wine juice resting on its lees for up to four months adding more structure and finesse to the final blend. The second fermentation in bottle lasts 35 to 40 days. Fragrant with fresh green, yellow apples, tropical fruit notes, baked goods and white florals on the nose. Creamy with a delicate mousse of bright apple, brioche, dried pineapple and citrus flavours elegant and mouth-filling on the palate.
