A superb Grand Vintage (2012) Extra Brut with a smoky, fresh baked-bread nose. Zesty and fresh with ripe apple, peach, honeyed, toasty nut flavours on a lively mousse. Chill and enjoy now and for the next eight years.
Champagne food pairings: pasta with cheese-based sauce, caviar, lobster thermidor, sushi.

If the Crémant De Bourgogne also in this release is the Pauper then this classic Champagne is the Prince. It has abundant aromas of pastry and buttery, sourdough. Aromatics of ginger, pear and ripe apple carry over to the palate. It has a beautiful fine, lively mousse, lovely tension and a long finish. A full and round style of Champagne with lots of presence, where the yeasty notes are evident and it feels older than it really is. On the nose are notes of sable breton, lemon, pears, and cooked apples. On the palate are ripe apples, cooked pears with a fresh acidity and finish of butter and lemon zest. 2012 vintage in Champagne is considered an exceptional vintage despite vignerons at the time, who called it one of the worst growing seasons. Great, long, lingering finish with an outstanding after taste that brings out the depth of this Champagne.
