A robust, rustic Bordeaux red wine blend of mostly Cabernet Sauvignon with Merlot. Firm tannins need cellar time then decant 2 hours and pair with a rare steak. Aromas of wild cassis and black currant.

Food pairings: breaded veal cutlets, duck breast with celeriac purée, pomegranate gastrique and Brussel sprout ragout, tagliatelle alla Bolognese, chicken herb-rubbed roast.

The nose on this wine was very subtle but on the palate it was a well balanced, full bodied, smooth wine with a complex finish. Decanted 2 hours prior. Paired well with beef. Tasted December 2016.

60% Cabernet Sauvignon, 40% Merlot, a product from Bordeaux's left bank Haut Medoc region. Deep garnet in the glass. Intense aromas of prune, cassis and dried fruit. Elegant and complex, showing persistent evolution as it opens. Exotic spice, bitter chocolate and tobacco dance with a brooding earthiness. The wine is dry with high, finely integrated tannins. Very intensely flavoured. Plum, black cherry, cedar and spice all while showing a savoury edginess. A long finish with persistent tannic length. Outstanding. Developing nicely.
Pair with a herb crusted roast leg of lamb. Salty aged cheeses - Comte.

Cab Sauve/Merlot left bank Bordeaux blend. Deeply garnet coloured with ever evolving and pronounced intensity of aromas consisting of prunes, dried fruit, cassis, sweet spice, vanilla, smoke, nutmeg, tobacco, cedar, leather and a touch of fennel seed. Also pronounced flavour intensities of plums, black cherry, raisin, fig, leather toast and bitter chocolate. High alcohol and tannin, M+ body and finish with M acidity. Still developing, can drink now but will benefit from further aging too.
This full-bodied Bordeaux red wine is a blend of 60% Cabernet Sauvignon and 40% Merlot grapes that was fermented in French oak barrels and aged for 12 months in them. Pair with grilled game dishes. Firm tannins. - Community Wine Reviews
