So, the definition of Pavlovian is “a learning procedure in which a biologically potent stimulus (e.g. food) is paired with a previously neutral stimulus (e.g. a bell).” In this case, it would be burgers from the grill to Time Winery’s Cabernet Sauvignon 2018. It screams burgers and every time I sniff at it, that’s all I want… aside from the wine, of course.

The 2018 Cab Sauv is dry, medium-plus bodied, meaty and spicy on the palate, intense with dark fruit, blackberry, menthol, vanilla flavours, medium-acidity and rich, grippy tannins. Decant two hours prior to pouring with burgers and ribs or cellar for a year and try it in 2022. Tasted March 2021.
