Clear and deep red. Cassis, mint leaf, vanilla and baking chocolate in the nose. In the mouth there is chocolate covered cherry and vanilla bean. Slightly overly sweet for my palette but I love using it to make a delicious coq au vin. The alcohol and body keep the sauce rich while the sweetness mellows the chicken, garlic and onions. Pair with softer cheeses like Saint Andre and Chaumes or keep it simple and order a fully loaded meat pizza.
