A very cool experiment by Flat Rock Cellars to compare the impact of indigenous, natural yeast for fermentation versus a specific strain added for fermentation. The Nature Pinot (natural yeast) result is lovely, with a slight floral aromas, along with hints of cherry, and a bit of an earthy note. Medium bodied, smooth, with soft tannins and bright acidity, along with lots of red cherry flavours. Enjoy with turkey, salmon, or pork.
