Still Pinot Noir from the Champagne region is very hard to source – especially outside of France. In the Champagne region, still Pinot Noir is only made in the very best vintages, and always in small batches. Made by the famous Champagne house Bollinger, to my surprise, it wasn't similar in style to red Burgundy, but rather, shared more characteristics of a Cabernet Franc from Chinon.
It’s quite a powerful wine with evident tannins, so therefore benefits from a few hours of breathing to soften its harder edges. To make the most of its fresh and young style, I'd recommend serving it at the same temperature you'd serve a Beaujolais (16C).
On the palate you may find notes of red berries, currants, and sour cherries with slight peppery notes on the finish. Enjoy it with braised meat dishes such as osso buco or boeuf Bourguignon. Drink by 2020.
