Bubbles are always special, but I had been saving the Sperling Vineyards Vision Series Blanc de Blancs Brut Nature (2013) for a really special occasion which turned out to be my birthday. The winemaker notes say that the 2013 could age 10-plus years, and so 2023 was the plan. I can unequivocally tell you that it could have cellared a few more years, but what a beautiful Blanc de Blancs it is/was ;). Every bit of it is in perfect balance. From its pale yellow-gold hue in the glass to its frothy fine beads that dance and leap from it fragrant with flinty, oyster shell, briny mineral, leesy and citrus zesty flavours so fine, elegant and harmonious on the palate.

The Chardonnay grapes (clone 548) for this vintage were estate grown and sourced from a single block of vines from a high-elevation vineyards rich in mineralogical clay and ultrafine limestone particles giving the wine its chalky, flinty and briny mineral notes. This bubble is without dosage, so it is bone dry (1.8% g/l res sugar). Grapes were whole cluster pressed and the cuvee fermented to dryness without malolactic conversion and with second fermentation in bottle. The wine spent 30 months on its lees.

Alas, there is no more of this delish traditional method bubble. So, I might just have to get another bottle to see what it does in 2025. Tasted August 2023.
