Cave Spring Riesling Icewine 2006, V.Q.A. Niagara Peninsula, Ontario, Canada: Vintages Wine Panel: Cave Spring cellars their Icewines for a full year in bottle prior to release. The 2006 vintage shows a superb balance of fruit and acids, suggesting excellent potential for mid-term ageing (6-8 years+). My note: This is one of Canada’s best Riesling producers, whether in the dry table wine style or a sweet dessert wine like this one.
