To kick-start the Vancouver Wine Festival Week (Feb 25 to Mar 2 2014) featuring theme country France, today I had a wonderful and little-known Sauvignon Blanc from the appellation Saint Bris. This delicate, almost water-white wine with its bracing acidity, and flinty, light gooseberry, citrus flavours goes best with lighter fare like steamed clams and pasta with a delicate white wine sauce, and complements the lighter melon and mineral flavours of raw Miyagi oysters. I had it with fresh scallops sautéed in lightly browned butter finished with some fresh chopped chives and parsley. Enjoy!
