Tedeschi Capitel Dei Nicalò Leggero Appassimento Valpolicella Classico Superiore 2007, D.O.C., Veneto, Italy: Vintages Wine Panel: This wine is a blend of 30% Corvina, 30% Corvinone, 30% Rondinella, and the remaining 10% is a combination of Rossignola, Oseleta, Negrara and Dindarella. Tedeschi uses the appassimento method: they pick fully ripe grapes, then allow them to dry on mats for about one month prior to pressing. The resulting wine is even richer than traditional Ripassos.
