Bollinger is on of my favourite non-vintage champagnes: robust, complex, toasty and layered. No wonder James Bond loved it. Crisp and dry with a lovely mousse and persistent ting beaded bubbles that laced down the sides of the glass. Pair with tuna tartar.

Elegant and complex, this Champagne has classic notes of apple and honey with delicate biscuit and red fruit adding to its complexity. The delicate mousse lingers on the palate on the long, refreshing finish.
Enjoy on its own or pair with your favourite canapes, kettle chips, or oysters.
Drink now, or cellar until 2020.
Date tasted: October 2014.
This is the convenient half sized bottle at 375 ml. It's a great format for when you want to start a meal with just one glass or so of champagne each. Bollinger is always on the robust side of the Champagne style spectrum, and this non-vintage version is a signature of the sparkling wine house.
