Steamed Mussels

½ cup olive oil
¼ cup diced shallots
3 teaspoons chopped garlic
5 cups cleaned mussels
1 ½ cups Messina Hof Private Reserve Chardonnary
¼ cup chopped fresh parsley
3 teaspoons chopped fresh basil
5 tablespoons cold butter

In a sauté pan, heat oil. Add shallots and garlic; sauté for 2 minutes. Add mussels, wine, parsley, basil and butter; cover and steam until mussels open.

Serves 2


Complementary Wines: Chardonnay Unoaked, Chardonnay: New World (full-bodied, fruity), Chardonnay: Old World/Chablis, Chardonnay: Pouilly-Fuisse, Chenin Blanc
