Feuillatte Collection's Blanc de Blancs Champagne is an elegant, medium-bodied sparkling wine offering notes of citrus zest, brioche, white peach and almond. This is a Blanc de Blancs, made from 100% Chardonnay, thus the moniker blanc des blancs (white wine from white grapes). This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. Serve it well chilled with oysters on the half shell as the wine's minerality and bright acidity complement the briny shellfish, or pair it with lemon-butter sole where the wine's creamy mousse enhances the delicate fish. Chef de Cave Sébastien Moncuit oversees production for this cooperative, which represents over 5,000 growers across Champagne and is the third-largest house in the region. Nicolas Feuillatte was founded in 1976 and has become renowned for showcasing terroir-driven Champagnes at exceptional prices. This refined Blanc de Blancs will continue to develop toasty, honeyed complexity through 2030.
