Eiko Fuji Mt. Fuji Ban Ryu 10,000 Ways reveals complex aromas of honeydew melon, toasted grain, white jasmine, and hints of almond cream with whispers of cucumber and anise. Sweet and medium-bodied with silky texture, it flows across the palate with layered intensity before finishing clean with warming brightness. Serve it chilled, at room temperature, or gently warmed through 2028. Kodai Kato, head toji and one of the youngest master brewers in Japan to win a gold medal at the National Japan Sake Competition, crafts this versatile Honjozo-style sake at the 13th-generation family estate founded in 1778 in Tsuruoka City on the Shonai Plain, a celebrated rice-growing area enriched with snowmelt and pristine mountain water. The name "Ban Ryu," meaning "10,000 ways," reflects this sake's remarkable adaptability—a small amount of distilled brewer's alcohol added during production creates a beverage that can be enjoyed at multiple temperatures and paired with countless dishes, embodying the philosophical flexibility prized by sake connoisseurs. Pair this multifaceted sake with grilled yellowtail collar where its clean finish cuts through the fish's rich oils, or enjoy it alongside chicken yakitori as the sake's gentle sweetness complements the caramelized, savory glaze.
