Dandelion's Fairytale of McLaren Vale is a striking 100% Grenache rosé sourced from characterful 25-year-old bush vines, pouring a vivid coral in the glass and opening with an alluring bouquet of crushed pomegranate, dried lavender, blood orange peel, white cherry, and a sun-warmed earthy undercurrent that speaks to the age and depth of the vines. At 12.8% alcohol, it's dry, fresh, and generously textured, with a lively acidity and a subtle creaminess that comes from 15 weeks resting on the lees after fermentation in French oak with indigenous yeast, a process that gives this rosé a complexity well beyond its modest price. Dandelion Vineyards was founded by Elena Brooks, one of Australia's most celebrated winemakers, whose passion for McLaren Vale's ancient bush vine heritage drives everything the estate produces. Serve it well chilled with grilled chicken thighs glazed with honey and harissa, where the wine's fruity depth and earthy lift find a wonderfully complementary match, or tuck into fish tacos with a zesty cabbage slaw and avocado crema, letting the wine's bright acidity and pomegranate freshness cut through the richness with ease.
