80% Chardonnay with 20% Grechetto
Pale lemon colour with an intricate bouquet. Peach, dried apricot and flowers. Very smoky with vanilla, burnt sugar and minerals. Flavours are intricate expressing Golden delicious apple, ripe asian pear, smoke, vanilla bean curd and a touch of spice. Medium plus acidity and body with a medium finish. Ripe yellow apples persisting. Dry, refined and elegant with some real depth and weight in the mouthfeel. Pair with poached salmon and cream, garlic buttered shrimp and triple cream Brie.

Umbria I.G.T. Antinori Castello Della Sala Cervaro Della Sala 2015 is a Chardonnay and Grechetto white wine blend. The wine was aged in stainless steel tank and matured in oak barrels. The Cervaro name derives from the noble family which owned Castello della Sala during the 15th century. The Antinori family purchased the estate in 1940. The first vintage of Cervaro della Sala was produced in 1985. On the nose the wine is light citrus, ripe pears and acacia honey with a touch of vanilla and hazelnut wrapped up in a vibrant acidity. - Community Wine Reviews
