Ripasso means a wine "passed" over the spent skins of the semi-dried grapes used for Amarone, which adds depth and richness. This wine has intense cherry, dried fig, and balsamic aromas. Cherry and mouthwatering acidity, with a peppery finish. This wine demands a good marinara. I paired this with peppered socca (chickpea flour flatbread) topped with a garlicky - balsamic marinara, peppery arugala, and a generous drizzle of good olive oil.

The Ripasso style of wine has gained a following outside of its home in Italy as the fermented wine is re-passed or added to the casks of the fermented skins and lees of the much bigger styled Amarone wines, which adds colour and depth of flavour to the original and induces a second fermentation also adding alcoholic strength. - Community Wine Reviews
