Tart blackberry and sour cherry aromas and flavours with lots of acidity on the palate. Medium- to full-bodied. Tzafona in ancient Hebrew means northward, a nod to the cool climate in which the Cabernet Sauvignon grapes grow in Niagara. This wine is Kosher and vegan friendly. Pair with brisket or grilled meats.

Cabernet Sauvignon food pairings: roast chicken, grilled flank steak, roasted root vegetables.

Reviews and Ratings

Melanie Lloyd - Certified Sommelier rated this wine as 89/100 with the following review:

On the nose, this Cabernet Sauvignon has aromas of jalapeño along with earthy beets, espresso, and eucalyptus leaves.

On the palate, there is flavours of tart black plums, cedar, as well as a touch of chocolate and smoke at the finish.

Tasted February 2018
Tzafona Cellars Cold Climate 2014 is a medium-plus bodied Cabernet Sauvignon from the Niagara Peninsula wine region. This is a Kosher-for-Passover Cabernet with ripe blackberry, savoury spice and dark chocolate flavours. Tannins are chewy. Pair with a rack of lamb with roasted potatoes sautéed in fried onions. - Community Wine Reviews
