Wow, Seven Stars Rigel 2023 is one crisp and apple-zesty B.C. bubble. Lovely and made for raw oysters on the half shell with a strawberry Rigel mignonette -- which is how we had it (the winery suggests a pork schnitzel or raclette – also great options).

Crafted in the traditional method as in champagne, the wine undergoes a secondary fermentation, "prise de mousse, during which the sparkle is naturally captured in the bottle."
Fresh on the nose and palate with green apple, lime zest, minerally and flinty flavours delivered on a creamy, persistent mousse, it’s so very good. Tasted July 2026.

Produced from 100% Riesling grapes sourced from the sustainably managed Fool’s Gold Vineyard in North Oliver. The vineyard is west facing with sandy clay and loam soils layered with rock and gravel and provides excellent drainage and ideal growing conditions for this wine.

Winemaker's Notes: “Only the free-run juice was selected for the final cuvée, then cool fermented in stainless- steel to preserve delicate aromatics and freshness. The wine was aged en tirage for 12 months before disgorgement and finished with a proprietary dosage."
