Serve it well-chilled with a plate of honey-drizzled prosciutto-wrapped melon—the wine’s bright acidity and delicate bubbles will dance with the salty-sweet combo—or tuck it away for 2-3 years to let those toasty notes deepen. Fascinating fact: Winemaker Sarah Kim, a rising star in Canadian sparkling wine, crafts this beauty using the traditional method, and the estate’s vineyards are perched on one of the region’s sunniest slopes, ensuring ripe, expressive fruit.
