Shichiken Yama No Kasumi Sparkling Sake is a cloudy, lightly sparkling sake from Yamanashi Prefecture, made using secondary fermentation in the bottle, the same method used in Champagne. It's light-bodied and dry with under 13% alcohol, and the gentle bubbles carry aromas of green apple, ripe pear, and a hint of lactic cream, with a soft mineral edge on the finish that comes from the snowmelt waters of Mount Kaikoma filtering through granite over decades. Serve it well chilled in a flute and drink it young to catch it at its freshest. This is the convenient half bottle size (375 ml), ideal when you'd like to begin a meal with a glass and a half each to toast. Master brewer Ryogo Kitahara spent five years and many an exploded bottle perfecting this sake before releasing it in 2015, and his patience paid off when he was named Best Young Brewer at the Sake Competition in 2017.
