A mouthwatering Sauvignon Blanc from Prince Edward County Ontario. Dry, high acidity, delicate on the nose and palate. Lightly touched by a combined partial acacia wood barrel fermentation and 2/3 stainless steel fermentation on lees. Delicate citrus zest with a subtle layer of soaked raw almond. Tasted 2016 vintage in July 2017. 88 points

Does not meet my expectations. A simple one-dimensional high acid Sauvignon Blanc lacking in flavours, texture and finish. Key notes are lime, lime, and lime. Still, a light-bodied refreshing white wine but nowhere near a benchmark example of Sauvignon Blanc. Tasted July 2017 by @sommsosa | bespoketastings.ca
Our original test plot of 130 Sauvignon Blanc vines dates back to our very beginning in 2001, making it the oldest of this varietal in PEC. We were encouraged enough by the quality of the fruit to plant another 1000 vines parcel in 2013 followed by another 300 vines the following year.
Two thirds of the juice was fermented in stainless steel resting on lees for six months. The remaining 500 L was barrel fermented in a new Acacia wood barrel for the same duration.
