Longview Devil's Elbow Cabernet Sauvignon offers concentrated aromas of blackcurrant, eucalyptus and hints of leather. It's dry and medium-to-full bodied with a polished texture. Serve it at room temperature with slow-braised venison shanks in red wine sauce where the wine's generous fruit complements the rich sauce while its firm tannins balance the tender meat, or cellar it through 2030. Winemaker Paul Hotker crafts this wine from estate-grown grapes on the family-run property, which brothers Mark and Peter Saturno established in Macclesfield in the Adelaide Hills. The wine takes its name from a notorious hairpin corner on the old road to the Adelaide Hills, a white-knuckle turn that locals claim delivers the same adrenaline rush found in a glass of this wine. This versatile wine also pairs beautifully with wild mushroom risotto finished with truffle oil and Parmesan, where the wine's earthy depth echoes the fungi while its bright acidity cuts through the dish's creamy richness.

Cabernet Sauvignon food pairings: wild goose in gravy mushrooms and olives, roast saddle of rabbit with apricot and apple stuffing, venison shanks prunes in red wine sauce.
