Pure green apple vibrancy and intensity of flavour with mouth-awakening acidity. Medium-bodied and fresh. This Burgundian white wine made in the Village appellation of Auxerrois is unusually made from the Sauvignon Blanc grape, which is lesser known than Chardonnay and far fewer wines are made from it in Burgundy. It nonetheless is superb. Enjoy with fresh oysters.

Food pairings: poached seafood, sashimi and sushi, bouillabaisse, fresh oysters on the half shell..
