From Sarah Jessica Parker, Invivo X SJP 2020 Rosé is a dry, fresh and fruity blend of Cinsault, Grenache and Syrah. Elegant on the palate with juicy red berries, fresh peach, ripe red apple and citrus zest flavours finishing long and silky. The wine was produced in collaboration with the Vins Chevron Villette. Grapes were sourced from the famous ‘Golden Triangle’ in Saint Tropez between Puget-Ville, Les Arcs and Le Thoronet Abbey which was built in the late twelfth century. The area is known for its clay-limestone soil, while Puget-Ville & Les Arcs are for Argilo-siliceous soil. Grapes were whole-bunch fermented with a few hours skin contact giving the wine a pretty coral pink hue. The wine juice was cool-fermented to dryness with some lees ageing in stainless steel tanks.

Rosé food pairings: veal scallopini, pork tenderloin, green salads.
